The big picture fantasy for our retirement is to run Encil House in the summer and run a boutique place in Mexico during the winter. There have been many Mexican vignettes that inspire us but nothing like the colonial architecture and haciendas of the Yucatan. Pictured is Coqui Coqui in Tulum created by Nicolas Malleville. I first found this on The Selby. So inspiring I can't stop dreaming about it. Keith and I are going to venture to their spa when we are in the Mayan with family and friends this December.
